Hi All,

It's been quite a while since I last posted to the Tempers Society forum, years and years, but I have a new little technique for getting my yolk with virtually no waste, and no mess, so I thought I'd share with all the egg heads here. I use one of those small syringes you can get at the drugstore for giving medicine to infants (they were free at one time but still cost very little). They come in 3 and 5 mil size, no needle at the end just a small plastic spout, often with a plastic stopper. So crack the egg, let the white slip away, and keeping the yolk in half the shell, poke a small hole in it, insert the syringe, and draw up the amount you need. If you mix your yolk with water you can measure out the egg, measure out the amount of water by drawing it in the syringe, then allow some air to enter and shake. It's just so easy. I've also found that keeping it in the stoppered syringe, with no air, keeps it absolutely fresh for a very long time. Obviously it will only work if you use a fairly small amount of yolk at any one time.

And then, of course, you can eat the "cholesterol reduced" egg as a health food:-)

I hope that's helpful to someone.

Richard
